Cooking Vegetables

During the past 6 or 7 years, I have been a strong advocate of eating lots of raw food; especially vegetables.  Why?  Because I believed that the nutrient value was better for you.  I read and followed a lot of Hallelujah Acres material when I was first diagnosed with non-hodgkins lymphoma.  The result for me was renewed energy and a cleaning up of my intestinal system, a pretty good reason to eat raw.   So, you would think that I would continue with the program.  However, that has not been the case, since my clear diagnosis.  For instance, I like my squash cooked; it's a "comfort" food.  Steamed vegetables taste great with just a little butter, etc. But I would feel guilty.  Well, they say you can find proof to support anything.  Today, I read an article, written by  Elizaabeth Johnson, PHd, a scientist at the Friedman School of Nutrition Science.  She stated that various methods of cooking vegetables can actually boost certain nutrients.  Actually, some of the healthiest plant pigments in vegetables are released only when they are cooked.  For instance, steamed spinach provides more carotenoids than a spinach salad.  That's good for me; I never did like spinach salad.  As well, boiling carrots causes the carotenoids, including beta-carotene, to become 14% more concentrated, making it easier for your digestive tract to access them.  Not only that, but boiling carrots, increases antioxidant capacity, while only diminishing the vitamin C level slightly.  If this is indeed true, then I feel it has great impact for people who have cancer or other serious illnesses.  During my years of living with cancer, I was always trying to find ways of not burdening my digestive system.  That is why I did not eat after dinner in the evening and I only allowed fresh squeezed vegetable juices in the morning.  I did not eat anything solid until at least 10:30 a.m. and then it was usually a fruit smoothie or snack.  So enjoy your vegetables, cooked and raw.

Sugar

Your Genes Remember a Sugar Hit

sugarHuman genes remember a sugar hit for two weeks. What’s more, prolonged poor eating habits could be capable of permanently altering your DNA.

A team studying the impact of diet on heart tissue found that cells showed the effects of a single sugar hit for 14 days. The cells switched off genetic controls designed to protect the body against diabetes and heart disease.

Regular poor eating could amplify the effect, with genetic damage lasting months or years, and potentially passing through bloodlines.

WOW!  Another good reason to cut back on sugar and sugar related products for sure.  I knew that sugar was considered to be food for cancer.  But this article explains the damaging effect of sugar on anyone.

Eating Fruit

Eating fruit is more than just buying fruits, cutting it and just
popping it into our mouths.  It's not as easy as you think.  It's important
to know how and when to eat..

What is the correct way of eating fruits?

IT MEANS NOT EATING FRUITS AFTER YOUR MEALS!  - FRUITS SHOULD BE EATEN ON
AN EMPTY STOMACH.
If you eat fruit on an empty stomach, it will play a major role to detoxify
your system, supplying you with a great deal of energy for weight loss and
other life activities.

FRUIT IS THE MOST IMPORTANT FOOD - Let's say you eat two slices of bread
and then a slice of fruit..  The slice of fruit is ready to go straight
through the stomach into the intestines, but it is prevented from doing so.

In the meantime the whole meal rots and ferments and turns to acid.  The
minute the fruit comes into contact with the food in the stomach and
digestive juices, the entire mass of food begins to spoil.

So please eat your fruits on an empty stomach or before your meals!  You
have heard people complaining - every time I eat water-melon I burp; when I
eat durian (fruit from Asia with a foul smell yet delicious flavor) my
stomach bloats up; when I eat a banana I feel like running to the toilet
etc. - actually all this will not arise if you eat the fruit on an empty
stomach.  The fruit mixes with the putrefying other food and produces gas
and hence you will bloat!

Graying hair, balding, nervous outburst, and dark circles under the eyes -
all these will not happen if you take fruits on an empty stomach.

There is no such thing as some fruits, like orange and lemon being acidic,
because all fruits become alkaline in our body, according to Dr.  Herbert
Shelton who did research on this matter.  If you have mastered the correct
way of eating fruits, you have the Secret of beauty, longevity, health,
energy, happiness and normal weight.

When you need to drink fruit juice - drink only fresh fruit juice, NOT from
the cans.  Don't even drink juice that has been heated up.  Don't eat
cooked fruits because you don't get the nutrients at all.  You only get to
taste. Cooking destroys all the vitamins.

But eating a whole fruit is better than drinking the juice.  If you should
drink the juice, drink it mouthful by mouthful slowly, because you must let
it mix with your saliva before swallowing it.

You can go on a 3-day fruit fast to cleanse your body.  Just eat fruits and
drink fruit juice throughout the 3 days and you will be surprised when your
friends tell you how radiant you look!

God's Pharmacy! Amazing!

My friend sent this to me in an e-mail.  I don't know where she found it, but I thought it was fascinating and so am including it in my blog.

" It's been said that God first separated the salt water from the fresh, made dry land, planted a garden, made animals and  fish... All before making a human. He made and provided what we'd need before we were born. These are best and more powerful when eaten raw.   We're such slow  learners...

God left us a great clue as to what foods  help what part of our  body!

God's Pharmacy!  Amazing!

A  sliced Carrot looks like the human eye. The  pupil, iris and radiating lines look just like the human eye... And YES, science now shows carrots  greatly enhance blood flow to and function of the  eyes.

A  Tomato has four chambers and is red. The  heart has four chambers and is red. All of the research shows tomatoes  are loaded with lycopine and are indeed pure heart  and blood food.

Grapes hang in a cluster that has the shape of the heart. Each grape looks like a blood cell and all of the research today shows grapes are also profound  heart and blood vitalizing food.

A  Walnut looks like a little brain, a left and right hemisphere, upper cerebrums and lower cerebellums.  Even the wrinkles or folds on  the nut are just like the neo-cortex. We now know walnuts help develop more than three (3) dozen  neuron-transmitters for brain function.

Kidney Beans actually heal and help maintain kidney function and yes, they look exactly like the human kidneys.

Celery, Bok Choy, Rhubarb and many more look just like bones. These foods specifically target bone strength. Bones are 23% sodium and these foods are 23% sodium. If you don't have enough sodium in your diet, the body pulls it from the bones, thus making them weak.  These foods replenish the skeletal needs of the body.

Avocados, Eggplant and Pears target the health and function of the womb and cervix of the female - they look just like these organs. Today's research shows that when a woman eats one avocado a week, it balances hormones, sheds unwanted birth weight, and prevents cervical cancers. And how profound is this?  It takes exactly nine (9) months to grow an avocado from blossom to ripened fruit. There are over 14,000 photolytic chemical constituents of nutrition in each one of these foods (modern science has only studied and named about 141 of them).

Figs are full of seeds and hang in twos when they grow.  Figs increase the mobility of male sperm and increase the numbers of Sperm as well to overcome male sterility.

Sweet Potatoes look like the pancreas and actually balance the glycemic index of diabetics.

Olives assist the health and function of the ovaries

Oranges, Grapefruits, and other Citrus fruits look just like the mammary glands of the female and actually assist the health of the breasts and the movement of lymph in and out of the breasts.

Onions look like the body's cells. Today's research shows onions help clear waste materials from all of the body cells. They even produce tears which wash the epithelial layers of the eyes. A working companion, Garlic, also helps eliminate waste materials and dangerous free radicals from the body."

Now, don't you agree.  That is fascinating.  When I was dealing with cancer, I ate many of these whole foods and in the raw state, except for sweet potatoes.  I can't say that I tried them.  I think they might taste great if you grated them in a salad.

Kids Don't Need Exercise!

This article was adapted from an article I just read in the newspaper. saying that if you want healthy kids, skip the gym.  Really!

As we all know, schools have been cutting back on physical education classes, even cutting them out, in order to have more class time.  At the same time, it's a known fact that obesity is on the rise among our youth.  Is the lack of P.E. classes to blame?  I don't think so.

According to a new study by Britain's Peninsula Medical School, P.E. classes won't keep kids from getting fat.  The study concluded that "trying to force a kid to exercise may not work".

No kidding!  I believe people have the wrong idea about exercise and good health.

Now, don't get me wrong. I don't think it's healthy for kids to sit in front of a TV or computer all day long playing video games and watching movies.  Kids do need to get outside to play games like tag, soccer, baseball.  They need to ride bicycles, skateboards, go swimming, etc. with friends and family.

But ultimately, that's not what is going to keep them healthy.  Being healthy, comes from what they put into their bodies.

Think about what kids eat these days.  Cereals, chips, cookies, sodas, candy, chicken nuggets, soy burgers... the list goes on.  Most of the stuff kids eat is full of all manner of chemical substances, loaded with sugar and/or salt.  No wonder obesity is becoming an alarming statistic.

I'm sure you get my drift.  You can't allow kids to put this junk food in their bodies and then, expect them to be able to burn it off in an hour or two of gym each week.  With the number of calories they are taking in, they would have to run laps all day.  Okay, they may be thinner, but they still won't be any healthier.

The way I see it, forget worrying about how many hours of exercise your kids are getting. The best way to have healthy kids is to feed them healthy food.

Asparagus

Today I want to talk about the asparagus and cancer article I wrote a few days ago.  My brother has been taking  it and to his amazement he passed a kidney stone that he has not been able to do before.  He has had trouble with kidney stones in the past and has always had to see a urologist for them.  The last time, he was told that there was still a kidney stone and since it wasn't doing any harm to not worry about it.  After just 4 days on the asparagus, he passed it on his own, with no problem.
I have been taking it as well and while I can't say that I've passed a kidney stone, I can say that I feel great.  With all the vitamins and minerals in it, as well as glutathione, I am certainly strengthening my immune system.

Give Me The Butter!

I love butter!   - always have, butter on my toast, butter on my vegetables, corn, baked potatoes, etc.  Over the years, I, like probably many of you, have been programmed to believe that butter is not good for you.  There are all kinds of alternatives, margarines, olive oil spreads available, that are much better for you.  Yuck!  (in my opinion)

When I first began learning how to eat and prepare food in a healthy way, I was told to avoid fried foods.  However, if I did need to fry something, it was best to use butter; because it does not become rancid at very high temperatures.  Just use it sparingly.  I was pleased about that.  Since that day, I have been using butter regularly; but being very careful to not use too much. After all, I must protect my arteries, my heart and of course my waistline.

Well, today, I am excited to say that no longer will I deprive myself of my beloved butter.  As a matter of fact, I am doing a good thing for my body by consuming butter daily.

Read on to find out why:

"There seems to be a lot of question about which healthy spreads should be used to replace butter. Since the word is finally spreading about the harmful nature of trans fat, margarine has been officially declared as a substance which should be avoided. Of course, in its place have rushed countless other butter alternatives which do not contain hydrogenated fats. But now that refined vegetable oils, additives and preservatives are coming under fire, it leaves the question what in the world can we spread on our toast? The answer is simple and natural: go back to butter.

Of course, most people balk at the suggestion of eating real butter. After all, won't butter cause heart disease and all kinds of other frightening health conditions? Although the claim that butter is harmful has been a popular one in the last 70 years, it's an assumption with no foundation. In fact, statistics show the rate of heart disease has increased as butter consumption has decreased.

Butter is filled with essential vitamins and antioxidants in their most natural and absorbable state. Butter is actually a better source of vitamin A than carrots, especially for people who have trouble converting the beta-carotene in carrots into vitamin A. You can also find vitamin E and selenium in butter. These along with vitamin A actually protect the heart from free-radical damage, which is a factor in weakened arteries. On the other hand, fabricated spreads are filled with rancid and refined vegetables oils that cause free-radical damage.

The vitamin A in butter is a vital nutrient which strongly impacts growth in children. Deficiencies can affect the development of teeth, bones, and vision. Low-fat diets are often recommended for children even though these diets have been linked to a failure to thrive as published in Pediatrics in March of 1994. Low-fat diets which remove butter from children's lives may be cutting out their only source of absorbable vitamin A.

Another common misconception propagated by modern industry is that the fat in butter is bad for us. Butter is comprised of mostly short and medium chain fatty acids. These fatty acids can protect against cancer and boost immunity. They are also antifungal. Short and medium chain fatty acids are also more easily broken down for energy, which means its actually less likely that the fat in butter will be stored in the body.

The essential nutrients found in butter are not commonly found in other foods that are considered palatable in American society, which makes butter all the more necessary to our health. So many of our foods are manufactured fabrications that can't possibly offer the same health benefits as their natural counterparts. It's time to start choosing the real thing. It's time to bring butter back to the table."

Asparagus and Cancer

This information was sent to me by a very close friend.  I cannot verify the source; however, it is a very good read and I feel important enough to include here.  Here it is in its entirety.

Asparagus and Cancer

I am asking you to read it to the end. My Mom had been taking the full-stalk canned style asparagus that she pureed and she took 4 tablespoons in the morning and 4 tablespoons later in the day. She did this for over a month. She is on chemo pills for Stage 3 lung cancer in the pleural area and her cancer cell count went from 386 down to 125 as of this past week. Her oncologist said she does not need to see him for 3 months.

THE ARTICLE

Several years ago, I had a man seeking asparagus for a friend who had cancer. He gave me a photocopied copy of an article entitled `Asparagus for Cancer' printed in Cancer News Journal, December 1979. I will share it here, just as It was shared with me.

I am a biochemist and have specialized in the relation of diet to health for over 50 years. Several years ago, I learned of the discovery of Richard R. Vensal, D.D.S. that asparagus might cure cancer. Since then, I have worked with him on his project. We have accummulated a number of favorable case histories. Here are a few examples:

Case No. 1 A man with an almost hopeless case of Hodgkin's disease (cancer of the lymph glands) who was completely incapacitated. Within 1 year of starting the asparagus therapy, his doctors were unable to detect any signs of cancer and he was back on a schedule of strenuous exercise.

Case No. 2 A successful businessman 68 years old who suffered from cancer of the bladder for 16 years. After years of medical treatments, including radiation without improvement, he went on asparagus. Within 3 months, examinations revealed that his bladder tumor had disappeared and that his kidneys were normal.

Case No. 3 A man who had lung cancer. On March 5th, 1971, he was put on the operating table where they found lung cancer so widely spread that it was inoperable. The surgeon sewed him up and declared his case hopeless. On April 5th he heard about the asparagus therapy and immediately started taking it. By August, x-ray pictures revealed that all signs of the cancer had disappeared.. He is back at his regular business routine.

Case No. 4 A woman who was troubled for a number of years with skin cancer. She finally developed different skin cancers which were diagnosed by asking specialist as advanced.. Within 3 months after starting on asparagus, her skin specialist said that her skin looked fine and no more skin lesions. This woman reported that the asparagus therapy also cure her kidney disease, which started in 1949. She had over 10 operations for kidney stones and was receiving government disability payments for an inoperable, terminal kidney condition. She attributes the cure of this kidney trouble entirely to the asparagus.

I was not surprised at this result, as `The elements of material medica', edited in 1854 by a Professor at the University of Pennsylvania, stated that asparagus was used as a popular Remedy for kidney stones. He even referred to experiments, in 1739, on the power of asparagus in dissolving stones. We would have other case histories but the Medical establishment has interfered with our obtaining some of the records. I am therefore appealing to readers to spread this news and help us to gather a large number of case histories that will overwhelm the medical skeptics about this unbelievably simple and natural remedy.

For the treatment, asparagus should be cooked before using and, therefore, canned asparagus is just as good as fresh. I have corresponded with the two leading canners of asparagus, Giant and Stokely, and I am satisfied that these Brands contain no pesticides or preservatives.

Place the cooked asparagus in a blender and liquefy to make a puree, and store in the refrigerator. Give the patient 4 full tablespoons twice daily, morning and evening. Patients usually show some improvement in from 2-4 weeks. It can be diluted with water and used as a cold or hot drink. This suggested dosage is based on present experience but certainly larger amounts can do no harm and may be needed in some cases.

As a biochemist, I am convinced of the old saying that `what cures can prevent'. Based on this theory, my wife and I have been using asparagus puree as a beverage with our meals. We take 2 tablespoons diluted in water to suit our taste with breakfast and with dinner. I take mine hot and my wife prefers hers cold. For years we have made it a practice to have blood surveys taken as part of our regular checkups. The last blood survey, taken by a medical doctor who specializes in the nutritional approach to health, showed substantial improvements in all categories over the last one, and we can attribute these improvements to nothing but the asparagus drink.

As a biochemist, I have made an extensive study of all aspects of cancer and all of the proposed cures. As a result, I am convinced that asparagus fits in better with the latest theories about cancer. Asparagus contains a good supply of protein called histones, which are believed to be active in controlling cell growth. For that reason, I believe asparagus can be said to contain a substance that I call cell growth normalizer. That accounts for its action on cancer and in acting as a general body tonic.

In any event, regardless of theory, asparagus used as we suggest, is a harmless substance. The FDA cannot prevent you from using it and it may do you much good.. It has been reported by the US National Cancer Institute that asparagus is the highest tested food containing glutathione which is considered one of the body's most potent anticarcinogens and antioxidants. Please spread the news.... the most unselfish act one can ever do is paying forward all the kindness one has received even to the most undeserved person.

Blueberries

Do you like berries?  If you do, then eat up.  Mike Adams, editor for Natural News states "Berries are truly medicine from Mother Nature, and they support human health in so many ways that if berries were drugs, they would be called "miracle drugs."
Cancer patients benefit from the ellagic acid in raspberries.  Now research has shown that  blueberries contain "anthrocyanosides. In tests on rabbits, they found that these chemicals were effective in reducing the damage caused to brain blood vessels from a high-cholesterol diet. The anthrocyanosides helped block cholesterol from penetrating into the brain blood vessels. And since proper blood flow to the brain is essential for mental energy and health, it looks like blueberries may very well help improve brain function.
- Natural Health Secrets From Around the World by Glenn W. Geelhoed, M.D. and Jean Barilla, M.S.

A collaborative team of scientists at the University of Paris and the Semmelweis Medical University in Budapest extracted anthocyanosides from blueberries and injected them in rabbits eating a high cholesterol diet. The blueberry chemicals counteracted some of the ill effects of the atherosclerosis brought on by the high cholesterol diet. Rabbits fed high cholesterol plus blueberry chemicals had less severe calcium-fat deposits in their aortas and less-diseased small blood vessels in the brain than animals fed only cholesterol."

The above quotes were from the Natural News website, from which I receive their monthly newsletter.
I find it fascinating that natural whole foods offer everything we need to live healthy and be well.  So why is it that we buy so much prepared, processed food.  Of course, convenience is one reason; but also taste.  I believe America needs to alter their taste buds; to appreciate natural, wholesome fruit and vegetables, preferably in their raw state.

However, back to blueberries.  I do read a lot of info regarding nutrition and recently read, on the same site, that blueberries should not be mixed with milk.  How many of us put blueberries on their cereal or in yogurt?  Well, according to the latest news, we should not do that.  Apparently, mixing milk with blueberries suppresses the nutritional benefits of those blueberries, quite effectively.  And it's not just milk, either; proteins apparently interfere with the antioxidant properties of blueberries, binding them up in a way that suppresses assimilation.

Who knew?  Perhaps, my nutritionist, iridologist.  When I began changing my diet in order to get healthy; she told me to eat my fruit separate from other foods.

Raw Food Recipes

Today, I thought I would share with you one of my favourite recipe books for eating raw.  It is entitled "How We All Went Raw" by Charles Nungesser and Stephen Malachi.

One of the recipes in the book is a Sweet Kale Salad, involving of course a head of kale, then equal amounts of honey and olive oil.  You can add minced garlic, raisins and pine nuts.  The key to this salad is the massaging of the ingredients to soften the kale and blend the flavours together.  It is my husband's favourite salad and a hit at every family get together.

Another great book is "Recipes for Life" by Rhonda J. Malkmus.  It's put out by Hallelujah Acres and has all kinds of information about eating raw as well.  One of my favourite recipes in this book, and it was hard to pick one, is a

Marinaded Broccoli, Cauliflower Salad

You need:
    2 cups of broccoli florets,
2 medium carrots, cut in 1/4" circles
    1 medium tomato, diced
    1 cup cauliflower florets
1/2 cup red onion or sweet onion, thinly sliced
Place all vegetables in a bowl.

Make a marinade by placing the following in a blender and blend until smooth.
3 tbsp. extra virgin olive oil
    1 tbsp. fresh lemon juice
    1/2 tsp. garlic powder
    1/2 tsp. sea salt

Pour over vegetables, and add
    1 tbsp. Italian seasoning

Mix well, cover and set in refrigerator to chill overnight.

Before serving, top with
    1 tbsp. toasted sesame seeds

Enjoy!
